Actually, this is exactly how the Voce V-3 works. The V-3 claims full
polyphony for two manuals AND a full pedal board.

I have this same problem. I use an 88-key beast (RD-500) on the
bottom and the XB-2 on the top. I have a QuikLock stand (shaped sorta like a
pyramid) that allows me to angle the keyboards so that they are close
together, but the problem then is that I can't get to the 88-key control
panel, which is underneath the XB-2. Also, that QuikLock stand weighs a ton
(or at least a lot more than ANY stand should). A two manual controller named
in the wish list could solve this problem.
